chorizo, bean & leek soup

the easiest dinner to throw together

what you need

shot of olive oil 

3 leeks, chopped

2 chorizo sausages, sliced (farmers market people unite)

paprika

onion powder

pepper

chicken stock (500ml to 1L depending on vibes)

2 cloves of garlic, minced or finely sliced

can of white beans

bunch of dill chopped

what you do

heat up olive oil and add chopped chorizo into the pan until fats have started to render (5 - 6 mins)

tip in the garlic and spices and cook for another 4 - 5 mins

add the leeks, beans, and chicken stock.

Bring to a boil and then bring back down to a simmer and cook for 10 - 15 mins.

Season and finish with the herbs
